Low Sodium Peanut Butter Cholate Chip Cookies

My very first cooking video! I wanted to start with something everyone loves – cookies! Most of all, I wanted to show that it is possible to reduce the sodium content in the foods that you love without losing the taste. Enjoy!

Ingredients:

  • 1 ¼ cups flour (I use whole wheat, but regular is fine)
  • ½ teaspoon salt (Use a salt substitute)
  • 1 teaspoon baking powder (Use “Featherweight” substitute)
  • ½ cup shortening (Use unsalted butter or margarine)
  • ½ cup peanut butter (Organic has less sodium)
  • ½ cup granulated sugar (May use substitutes like Xyletol, Stevia, etc. but regular sugar is fine)
  • ½ cup light brown sugar, packed
  • ½ teaspoon vanilla (May use 1 teaspoon if you wish)
  • 1 egg
  • 1 cup chocolate chips
Preparation:

Pre heat your oven to 375°. Mix together flour, salt substitute and Featherweight baking powder; set aside. Cream shortening, peanut butter, and sugars; beat in vanilla and egg. Stir in flour mixture and blends well. Add chocolate chips – shape cookie dough into ¾ inch balls; place on greased cookie sheets (or use parchment paper over the cookie sheets for mess-free baking). You may flatten the cookies with the times of a fork if you wish a thinner cookie (I like mine “Fat” so they stay moist in the center). Bake cookies at 375° for about 10 to 12 minutes. I actually don’t time the cookies I just keep an eye on them until they look done. pressure perfectPressure Perfect
